Title: Running low on Canadian Bacon...

Not running low... Completely out!  :o

I started dry curing 20 lbs last weekend when I was making 150 lbs of sausage. I had to restock the freezer.

Sorry, no pictures of the process but here's the finshed product all sliced and vac packaged. The pictures are off my iPhone so they are not the best.

I have 2 big uprights... and one is half empty!  ;D

That's the one the kids usually "shop" at when they come over.  :D

Nice for you!  I hear it there about the "kids" shopping.  My son says he brings a empty ice chest when he comes here...but brings a treasure chest home!  :)

I hear ya Wyrman. I seem to smoke in spurts too when I manage to find some spare time here and there.

Mike that looks good, I just finished up making a couple of chunks of Canadian Bacon last weekend. Man that stuff is good.

Dam that looks good  8) and now I'm going to have to give it try.  ;D So far almost everything I have tried from this forum has been very good.

I may also be into the same situation as you Mike. My kids are into a eating healthy phase right now and didn't want to eat sausage because of the fat content. I made some of Kevin A's Thai chicken recipe and they loved it so much they tried some of the other sausages I made. The bad news is they want more. The good news is I like making it. ;D
