Made up some meat loaf, take all your fixins and loosely place in a plastic lined pan
Wrap and let sit (in the fridge) till firm, un wrap and plop on a rack

with a 2.5 lb mixture it makes 6 good sized loafes and leaves enough to grill for a burger bun :D

I'd like to try this. Someone please supply approximate measurements for the components. I'm not a creative cook but I can follow a recipe and measure volume.

This is what I started with,,,,,adjusted to my liking ;D
Michael's Meatloaf
1 T butter
½ C onion chopped fine
2 cloves garlic chopped fine
½ C celery chopped fine
¼ C green bell pepper chopped fine
¼ C red bell pepper chopped fine
3 T scallions, chopped
2 lb meatloaf mix (1 lb beef, ½ lb pork, ½ lb veal)
6-8 slices bacon
2 large eggs
2 T chives chopped
1 T Dijon mustard
1 t salt
½ t black pepper
½ t nutmeg
½ t red pepper flakes
½ t cumin
¼ t basil
¼ t oregano
½ C half & half (or whole milk)
¾ C fresh toasted breadcrumbs
Preheat oven to 350 oF. Melt butter in pan and sauté onion, garlic, celery, red & green bell pepper, and scallions and cook until softened, about 5 minutes. Allow to cool before adding to mix.
Combine eggs, half & half and all spices. Add all ingredients to meat and mix well.
Place meat on a shallow foil lined baking pan and form a loaf approximately 16" long, 5" wide, and 1 ½" high. Brush on half of glaze (see below) and add bacon strips crosswise, tucking ends beneath the loaf.
Bake for about 40 minutes or until internal temperature reaches 160 oF. Add glaze again in last 15 minutes of cooking.
Meatloaf Glaze
½ C ketchup
4 T brown sugar
3 T white vinegar
Mix all ingredients and set aside.
Feel free to experiment with your topping. Add BBQ sauce instead of ketchup and/or add some spices

I am like PMillen in that I am not creative in any way but can follow a recipe and thanks for posting it ... I am surely gonna give this a try. How can I go wrong ..... SMOKE & MEATLOAF. It has to be good. :)

I understand. I recall how busy life can be (I'm retired now so life's pretty damn laid back). The delay is of no consequence. Thanks for taking the time to post it. Meatloaf is what mamma used to make.
