Okay...I'm thinkin' that this may be the recipe http://www.smokinpetebbq.com/?p=505.

I'd like to try this.  Someone please supply approximate measurements for the components.  I'm not a creative cook but I can follow a recipe and measure volume.

Ummmm...Did I miss the recipe?

Sorry for not gettin back to ya sooner,,,,,,,,,,,,,,,life went crazy round here

This is what I started with,,,,,adjusted to my liking  ;D

Michael's Meatloaf

1 T butter
½ C onion chopped fine
2 cloves garlic chopped fine
½ C celery chopped fine
¼ C green bell pepper chopped fine

¼ C red bell pepper chopped fine
3 T scallions, chopped
2 lb meatloaf mix (1 lb beef, ½ lb pork, ½ lb veal)
6-8 slices bacon
2 large eggs

2 T chives chopped
1 T Dijon mustard
1 t salt
½ t black pepper
½ t nutmeg

½ t red pepper flakes
½ t cumin
¼ t basil
¼ t oregano
½ C half & half (or whole milk)

¾ C fresh toasted breadcrumbs

Preheat oven to 350 oF. Melt butter in pan and sauté onion, garlic, celery, red & green bell pepper, and scallions and cook until softened, about 5 minutes. Allow to cool before adding to mix.

Combine eggs, half & half and all spices. Add all ingredients to meat and mix well.

Place meat on a shallow foil lined baking pan and form a loaf approximately 16" long, 5" wide, and 1 ½" high. Brush on half of glaze (see below) and add bacon strips crosswise, tucking ends beneath the loaf.

Bake for about 40 minutes or until internal temperature reaches 160 oF. Add glaze again in last 15 minutes of cooking.

Meatloaf Glaze

½ C ketchup
4 T brown sugar
3 T white vinegar

Mix all ingredients and set aside.

Feel free to experiment with your topping. Add BBQ sauce instead of ketchup and/or add some spices

Have fun

Wow ... that must have been sooooo good.  ;D

It amazes me that people find so many ways to use their smoker and the recipes they come up with make me drool.

I am like PMillen in that I am not creative in any way but can follow a recipe and thanks for posting it ... I am surely gonna give this a try. How can I go wrong ..... SMOKE & MEATLOAF. It has to be good.  :)

I understand.  I recall how busy life can be (I'm retired now so life's pretty damn laid back).  The delay is of no consequence.  Thanks for taking the time to post it.  Meatloaf is what mamma used to make.

"We were so poor that when I was a child the only time I saw meat it was in the shape of meatballs.  I thought cows laid meatballs the way chickens lay eggs."

For me it was meat loaf.
