Title: Dead Deer Bacon

Got the idea from Curt from his thread here: http://forum.bradleysmoker.com/index.php?topic=22216.0

So I had 4 lbs. of dead deer and 6 lbs. of dead pig and 1 lbs. of back fat. It went like this.

Dead deer meets dead pig

Let them do a hand shake and get down to making bacon. To this I added my maple bacon mix and 850 ML. of maple syrup. Should be good a maple flavored.  ;D

Into three cake pans and into the fridge over night.

Next morning I flopped them onto the racks, came out real easy because I sprayed the pans with PAM. After they where in the racks I dusted them with some magic dust.

In the smoker now getting 4 hours of Hickory. Will up date later.

For what ever reason this one got done way before the others. The Thermapen said it was 145°F all over it so out it came. Cooling down now and waiting for the other two. Going in the fridge over night and than get sliced.

Yes Sir I do believe it was. Thing was is this....is that a saying or what  ;D I did rotate the racks a few times so it really don't make sense.

If that one was on the bottom for the first 4 hr during the smoke time he got a head start even with the rotate thing  ;)

Hey Rick the reason I went with that title was the guy who gave me the deer meat packaged them like this

The DD stands for the location he got it rather than the dead deer  ;D ;D

That's good vittles devo. Ann calls it "Super Spam" and loves it. I use the spice from Curleys and it turns our great.

Hmmm, I was wondering how you were going to slice that into jerky is why I remember it saying jerky. I guess the mind just see's what it wants to sometimes. Which can be a good thing ;D

Frying some up, very little grease. Some people warned me not to add the pork fat as it's to much fat..........seems I should have added more  :o

Time to vac pack and weigh it out into 1 lbs. packages. I used the to-go lids shiny side up to support the bacon. Makes for easy packaging into the vac. bags.

Nice job. ;D I want to try this but would have to use dead cow instead of dead deer since I don't have any DD. ;D

OH YA!!

That stuff is even better on the grill,,,,,,,,,,,,,,all them sugars wont burn like in the pan  ;)

Just dont try to make it crispy,,,,,,,,,,,it will turn into a piece of charred card board  ;D

Ya I picked it up at a yard sale last year. Great slicer for sure, just don't try and move it by yourself   :o :o :o :o
