Title: A few projects I have done over the holidays

Instead of making several different posts I will just lump them all together here.

Some Maple Bacon after drying for a nice pellicle

I'd be interested to see how the venison bacon comes out. May want to try that.

The Venison Bacon just came out of the smoker. It is all wrapped in plastic wrap and in the fridge to rest over night. I will pull it out and slice it tomorrow. The three slabs of solid meat. The proteins have most certainly bonded in these baby's, the are like solid blocks of rubbery goodness!!

I can show it cut up but I don't get to eat this one. This will be going to a friend that asked me to do some projects for him, if you know what I mean! ;D 8)

it looks good but I was hoping to find out how it tasted.  :-\
tell him you need a report when he eats some of it.  :)
Also where did you get the mix and the ground pork to add to it?

I will probably eat a slice for quality control. The spices I got from Curt (Frisco Spices). The pork I had in the freezer. I will just trade my pork for his beef and make it even

Great job.  So on a scale of 1- 10 how would you rate it? I made this a month or so ago and its OK but to me its not bacon but a really good spam  :)  But that's just me thats why I am asking

It is missing something. Not sure what it needs but it needs more flavorings in it I think. but I would give it a 6
