Dry aged rib eye removed from Umai bag this morning a week later than planned.
Start weight. 17 pounds 8 oz
End weight. 13 pounds 12 oz
Loss before trim 3 pounds 12 oz
I did not trim anything before dry bagging so I Expected that there would be a lot of trim. By leaving Fat on I think it ages better.

Trim took another 1pound 10 oz off
So it ended up costing $9.62 a pound for the aged beef.
Did one steak for supper, sorry no pic's, was very good. Guests tomorrow will get their review and pic's.
