Title: Went and did it again,,, Beefman canadian Bacon

the guest of honor

approx 16 lbs

the seasonings

3/4 tbsp mortons tender quick / per lb
3/4 tbsp brown sugar per lb
1/2 tbsp ground mustard per lb
1 tsp garlic powder per lb
1 tsp onion powder per lb

all seasoned up

let  cure 7 days and quick rinse then injected with apple cider 1 ounce per  lb

into the smoker with 4 hours of apple smoke at 200 F, pulled at 150

out of the  smoker

sliced and taste

great lookin bacon! jealous of the slicer and sealer.
What is the box on the top left out of your smoker?

What is the box on the top left out of your smoker?

my  digital controller that  controls the temperature of the smoker and also  controls smoke duration
