Title: Summer and snack stick ?

My dad and bro are coming to visit next week and I'm wanting to make some sausage while they are here with them.  Got a few butts in the freezer I planned on using.  Onky ? Is should I mix the summer sausage or snack sticks with beef or would it be ok with just pork?

I would use beef with both batches.

The only time I use 100% pork for sticks is for kabanosy

I just made 10 lbs summer sausage with 7 lbs venison. 2 lbs port butt and 1 lb bacon...it turned out excellent

Well that answers it I think.   What percents do yall suggest? Would 50/50 work? Trying to not spend a lot and I already have the pork.  Also what cut for the beef works well? Thanks yall!

Just use 80/20 or 90/10 GB
