I just love ribs, i can't get enough of them, so here's todays offerings:
Membrane removed:

I mixed up some honey, apple juice and a little olive oil, and gave them a good coating, then i sprinkled on a rub which consisted of:
Black pepper
Garlic powder
Cinnamon
English mustard powder
Demerara sugar
Small ammount of salt to season:

Only 4 racks this week, so a rack a piece ;)

They went into the BS preheated to 200F, 3 hours of hickory smoke, racks rotated every so often, at the 4 hour mark, water was changed, and i left the ribs in for about another 2 hours (6 hours total)
Took the ribs out of the BS, and they could have been eaten just as they were, but as we weren't quite ready to eat, so i put them in the crockpot with lashings of bbq sauce.

I know we always say this but.......they really were great ribs!, maybe the best i've ever done?, they were very very tender, moist and so tasty! ;D

I'll have to have you over when my mom is around to chow on some bones. She was born in Kansas, grew up in Iowa (on a farm) and when she is done with a bone, the dogs walk away unhappy.
From a family of 13 and she being the youngest, she learned to eat everything from the scrap pieces of food that the youngest would get (like the grissle, necks, wings, and backs for chickens). The bones will look look like they had been soaked in acid for cleaning. :)

Hey, turtle soup and fresh cooked turtle are awesome. I'd take some of them as well. Don't think I'd like to get ahold of the business end. My cousins use to bring back those snappin's in a gunny sack. Saw one snap a good sized tree branch. Would make an arm or a leg seem like a half thick tooth pic.
