I usually keep it pretty simple when doing a brisket. Just some salt and pepper and maybe a little garlic powder(i put garlic on almost everything though). I don't like to overpower the brisket flavor.

Salt, Pepper, a touch of Garlic and Onion for me, and of course spray with apple juice periodically.

Texas Style Brisket Southern Living Rub
Brisket Rub:
MAKES 2 CUPS
PREP: 5 MIN.
This makes enough for about three briskets.
1/4 cup kosher salt
1/4 cup sugar
1/4 cup black pepper
3/4 cup paprika
2 tablespoons garlic powder
2 tablespoons garlic salt
2 tablespoons onion powder
2 tablespoons chili powder
2 teaspoons ground red pepper
COMBINE all ingredients. Store in an airtight container

I'm a big fan of the TX style rubs. I use them on briskets, ribs, and chicken. My only advice is if you use a rub on chicken and also brine the chicken, reduce or leave the salt out of the rub othewise the chicken will be very salty.
