I have been smoking meat for a little more than three years but Christmas was my first time with a Prime Rib. All I can say is Oh My Goodness! It was just fantastic! I was a bit worried, this only being the second smoke in the OBS and the cut being very expensive but I am so glad I smoked it!
I did a nice little rub of gran. garlic, gran. onion, fresh cracked pepper, kosher salt and tarragon. Rubbed it and let it come up to room temp. It was 7.76 Lbs. I smoked for 3 hours with hickory then just heat for almost an hour more.
Ok, I'm off to try and find some Morton's TQ!

It was so good a friend of mine showed up yesterday with a 10Lb Prime Rib because he just wanted more!! He had tried the leftovers from the last one. THAT was awesome!

I just picked up another Traulsen cooler that has a bunch of empty racks in it that could use some meat on them. I need friends like yours. Mine just come and take. :D
