Title: another beefmann roast

Hey all here is my next go round of a 13 lb top surloin roast should be good

covered in olive garlic

then in brown sugar

then in a beefmann rub...

plan is to let it set in the fridge then smoke and cook over night  for dinner tomarrow...gonna cook to 170 and have a good meal  then make taquitoes with some of the meat... hope it comes out as planned...

Looks good Beef.  I assume at a temp around 210-220?

close ... i useally have my  Pid set at 205 for the night with the temp swing i get from 195- 198 to 210 or so...should be a  bit sweeter then the last

the next phase is smoking the roast and here it is  with hickory

and a friend had told me about a method of cooking the meat wrapted in foil and slow cooked till  tender and he stated that it is  pull apart tender.. i  couldent  get any  good awnsers out of  him for oven temps, times or  it,,, so my process is going to be done  my  way at a box temp of 200 to an it of 170 and see how it turns out.

roast in foil..PID is at 200 and this is the first time that i saw the therometer is at 200 as well... what a  shock

Beefman,
  Thats the way I do my Butts with a splash of Apple/Raspberry juice in there. Always turns out super juicy and after you pull pour the drippings over the top to be reabsorbed.
