Title: What's Smoking - Weekend of 2/7/09

No Q'ing last weekend, but the fried pork chops and biscuits were pretty good and gnawed on some spareribs I did the week before.  The cheese I did the week before is screaming at me from the back of the fridge, but I will not be tempted!  Made some chicken salad from the leftovers of the smoked yard bird - was quite nice on some pumpernickle.  This weekend I will be making lox and sampling the cheese and maybe a butt or a roast in my stickburner - I have to practice for an event coming up.  Will also do some chicken fajitas.  But what about the rest of you.  What's gonna be on your racks this weekend?

Either jerky or possibly some summer sausage.

Also hope to be making something in my Big Easy if it arrives in time. Not sure what I will make in the BE yet. Thinking about roasting a boston butt.

WTS has been driving me nuts with his beef roast posts so I think I'm going to have to give that a shot this weekend. I just haven't fully decided what yet. I gotta get my butt in gear and make some more sausage one of these days as well.

Heh I will be smokin' two large study guides for a test I'm taking at C&A carpet mill next week.

Thanks Tiny, this stupid stomach flu is terrible. Missed three days of work, have not eaten more than a couple pieces of toast and my blood sugars are still sky high. I think I'll feel well enough to get the sausage smoking done though.

lophole, do you smoke your breakfast sausage? Stuffed or patties? Do you add any cure or try to cold smoke?

I extrude it flat about in. wide and length to fit the smoker basket. Also fits in the 11in. vacuum bags. Seasonings are fresh ground pepper, brown sugar and TQ. Light smoke.

20# of Jerky and .... The Mrs. asked if I needed anything @ the store.... I said - 2# of Thick sliced bacon and 2# of sausage... can you say bacon explosion ?

Oh my FLBR, I been hearing about something Bacon Explosion but did not look till just now.  I went to http://www.bbqaddicts.com/bacon-explosion.html and I must say WOW!!!

Sure it looks amazing, but I would be petrified to each more than a half inch thick pinwheel.  Have you had this before.  I would be interested in opinions of the Bacon indulgence.

I was just going to wing it and see what happens. I was planning on slicing and perhaps frying after that.

FWIW, I just put the jerky in the dehydrator...

hey, I wonder how Jerky would do in the middle of the Bacon/Sausage roll.  In the place of the fried bacon.  I know it is dried and not fried.  But It might add a nice crispy texture and added twist....  hmm its an idea.  Just an idea, I might not try it but its a thought.  A thought, how does that differ from an idea.  OK, thinking about this just a little to much.  Sorry.

Hmmm.. jerky in the middle. Seems like it would make it tough to slice.
