It's been awhile since I posted a smoke...
I recently smoked a prime rib for some friends.
I rubbed the roast with olive oil and seasoned with cracked black pepper, kosher salt and a bit of garlic..

Only consolation I have is that I have two very nice bone-in NY steaks ready to hit the fire for my valentine. I've been saving a nice bottle of red for a special occasion and I think today is the day.

Cowgirl: I just noticed the grate under your prime rib. Are you smoking on an offset rig? Or grilling using indirect heat with some wood for smoke?

I smoked this on my horizontal wood burner. I really like the thing. lol

Cowgirl, that dish looks fantastic. The prime rib is perfectly cooked and the plating, well what can I say. You eat with your eyes first and mine are watering.... is that eye drool? ;D

Thankfully I did a little surf and turf tonight. A nice fillet mignon, lobster, baked potato, salad, garlic bread twists, and a bit of Red Simi Alexander Valley for the Mrs. I went domestic.
