Prime Rib & Twice Baked Potatoes

It's been awhile since I posted a smoke...
I recently smoked a prime rib for some friends.


I rubbed the roast with olive oil and seasoned with cracked black pepper, kosher salt and a bit of garlic..



Smoked with some hickory....



I added my twice baked potatoes for the last 45 minutes of the smoke.



I like prime rib a bit pink....



My prime rib, au jus sauce, twiced baked potato, salad and peaches....

Simply cruel, Ms. Girl.  Looks like one fine meal.

Only consolation I have is that I have two very nice bone-in NY steaks ready to hit the fire for my valentine.  I've been saving a nice bottle of red for a special occasion and I think today is the day.

Cowgirl:  I just noticed the grate under your prime rib.  Are you smoking on an offset rig?  Or grilling using indirect heat with some wood for smoke?

Consiglieri, your evening sounds perfect! NY strips and a nice bottle of red...hard to beat!
I smoked this on my horizontal wood burner. I really like the thing. lol

Cowgirl, that dish looks fantastic. The prime rib is perfectly cooked and the plating, well what can I say. You eat with your eyes first and mine are watering.... is that eye drool?  ;D
