I used 1lb Italian pork sauage and 1lb ground beef. Added some pizza seasining.
As you can tell by the pics, it didnt seem like much of the cheese hung around. So I would top it with the cheese and sauce at the end. Oh, the pepperni really kicked it up a notch!!! Thats how I like it though. I did 2 hours of hickory at 185, the finished at 225-230 until done (pulled at 167.)
I will make it again! The roni did make it a bit greasy, but thats all good!
I'm thinkin some high temp pepperjack cheese with some fresh Parmesan, red pepper flakes ect. Will report.

Oh yes. I had red pepper flakes in my meat mixture as well!
That's a good looking Fatty! (I actually think my wife recited those very words during our wedding vows; I've lost weight since then ;D). I like the pizza flair to it.
