i have been drooling at all of the fatties and the egg stuffed fatties so i decided to give it a try,
however since i don't make sausage yet i had to cheat and use the store bought.
fatty flattened out with a twist.
2 thin slices prosciutto, one slice asiago, and three halves boiled hen bullets (sliced longways)

what to do with leftover eggs? remove ends and put a slice of jalepno on each end.

then all loaded into smoker at 225 with 2 hrs of apple.

What was the base for the Sausage mix? I think you can jazz it up to your liking! There is a great number of Sausage masters here, so if you say it did not have enough smoke, or not enough heat, too dry, whatever. Help is here.

you just about have me talked into it, maybe after i hit 200 posts ;) ;)
It's really easy to pick through sausage recipes and mix up a small batch to make your own sausage mix. You can just start with store bought ground beef and/or ground pork. That way you can get it dialled in to your own taste. Experimenting is what it's all about.... It's all good! ;)

Smokinrookie, those look fantastic! And I love the egg-stuffed jalapeno slices covered with sausage! The fatty looked like it would be awesome with all the filling it had!

It's really more fun than meatloaf or a fatty! I usually take in samples to work to get feedback. The garlic-cajun egg balls got better raves than my sausage or normal fattys. Lot's of experiments in my head now
with egg in the middle. Could it be that a hard boiled egg could accept additional flavor from surrounding meat and spices. Would the mix be any better if you made the egg balls the night before and wrapped?
These are things I must know and report. Also LQ headed me in the right direction for doing some spiced bread crumbs to make it a true " Scottish Egg".

I can't get the idea of using a pickled egg and maybe some onions mixed into the sausage meat out of my head.

Walleye, now you have me thinking in the opposite direction that the meat could possibly absorb some flavor from a pickled egg, Could take me a while to decide how to procede next, but the wifey will hate me because everything has a kick of heat! Ever had a spicy pickled egg? I have not. Being from the midwest, all the bars had pickled eggs and I do not remember them as having anymore than a vinegar and spice taste. Fun stuff!
This is a great thread...WOW...so many ideas...I'm gonna go with a homemade spicey sausage with chopped jalepenos, egg and bread and butter pickles for a little sweet (might add some red bell pepper as well...for color and sweetness) ......wrap in bacon...smoke... bread crumb it when it comes out of the smoker...BE for a bit to fry...I'm hoping the bacon fat "inside the breading" will keep it moist while the BE does it's VERY HOT thing on the outside...and then....
Watch my hubby melt at breakfast the next morning!!! Doesn't get much better then that!!! ;D

Try to find some candied jalapenoes - more fun. Used some somebody gave me and took the fatty to the fly shop last Sat. Fun to see them bite into it, smile at the sweetness, then start asking for something to drink when the heat kicked in! Is that sadistic?
