Title: My first Fattie w/Qview
Post by: PensacolaJim on March 28, 2009, 04:14:23 PM
This is my first fatty I made a few days ago when I first got my Bradley. Starting with Jimmy Dean Sausage and spreading it out.

Next I filled it with green pepper, green onions, mushrooms, mozzarella cheese, some pizza sauce and added some spices.

Then I rolled it up and used a pound of bacon and did a weave with it.

I smoked it with Hickory at 220° for a couple of hours till the internal temp was 145°.
I let it rest for a few minutes to cool the cheese slightly.

Time to slice and taste.

It was a great first smoke with many more to come, I'm hooked!

Man, that looks good!  If you were near Austin, I'd drive over right now.

Wow, that is beauty on a plate!!  I hadn't thought about a filling like that - great idea and superbly executed.

That's one of the best fatties I've seen. Love the fillings, may have to try that one.
