I'm betting Kummok can answer this one ---

I've recently seen Black Cod Collars in a bag at T&T for $4.99/lb. They are hard to see inside the bag...

What's the collar??? Would it be good to smoke? The price is good, since Sablefish is $17.99+ here in Ontario.

Thanks, Rich

Never seen packaged "sablefish collars" but I'm guessing that they're the same part of the fish as the salmon collars I smoke.....if so, it's the part to the aft of the gills that they cut off to "straighten-up" the fillet for presentation. Same meat as the rest of the fish in salmon (except that the tail is drier and the belly is more oily). I wouldn't hesitate at all giving them a try!

Thanks!

The price is right so I'll give them a shot and let you know.....
