Ground beef jerky

Hello fellow smokers, making some GB jerky with cannon. My question is do you make your jerky strips first & let sit in the fridge or better to make jerky strips after the GB mixture has sat with cure & seasoning mixed in ? TIA for replies.

I mix cure and seasoning with the GB, then shoot it then smoke, then dehydrate.  No waiting between usually.
