I have been looking hard for a pictoral on how to trim a Beef Brisket.  I have never had any dealings with one.  I bought one this morning, and I don't want to screw it up.  Does anyone ever recall seeing one anywhere with pictures?

I think in one of Pachanga's post are some of his thoughts on trimming a brisket.

Just don't take off too much.

Better to have too much fat cap than not enough.

Its amazing what one can accomplish when one doesn't know what one can't do!

Hoss,

Here are my methods.  I don't trim much.  Fat equals flavor and moisture for self mopping.  Use trimmings for self basting in the shelf above the brisket.

The first post is written tips on  trimming within a recipe.
The second post is photos, some of which are about trimming and feeding bird dogs.
