Smoking GIANT Bird?

Well i've been reading a 18-20 pound-er is a bit dangerous. So i'm very concerned the 28 pound-er we've got will be outright crazy.

Can i smoke this beast? Its sitting in brine needs to go into the smoker in 3-4 hours. Should i just cut it in half?

I defiantly dont want to get anyone sick.

This bird is all natural 1 year old. A local lady raises and sells them. She was expecting them to be in the 15-18lb range but they got fat...

If you are concerned, smoke it for a few hours and then put in the oven. Just make sure you hot smoke with temp above 230*

28lbs... Wow!

I would probably spatchcock (butterfly) it in half.

If you transfer it to the oven after the smoke, that can decrease the cooking time.

The Turkey I just did - after the smoke - I cooked at an "oven" 275F until an IT of 155, then upped the temp to 325F until the IT was 165F
