Smoked Prok loin

So my brother shows up with this big ole hunk of meat and says "can you smoke this for me?"



"Heck ya" I says. "Give bout 4 hr"

No cure, no injection, just squeeze in a net sprinkle on a good ole rub then throw in the smoker cranked up to 250 F and roll 3 hr of hickory.



Right at the 3 hr mark the loins hit an IT of 145 and I pulled them.



Wrapped in plastic wrap, then vac sealed and out the door before i got the final shot. I wrap in plastic so the vac dont suck all the juices outta the meat.

I pulled the loins off at 145 so he could cut them into chops and cook on the barbie without them dryin out.

Good looking loins!!!  Like the idea of using the net.  Gonna have to try using the wrap before vacuum seal concept.  Thanks

If you wanta make some canadian/back bacon and want it round when your done, use the net.

Works every time.
