This is a 10lb batch of nepas slim jim recipe, it came out very good. Thanks nepas for the recipe.

Are you temp probing your sticks or just laying the probe on top of the sticks? Maybe I'm looking at it wrong .....kinda looks like it in the picture.

one of the ingredients is Mace.

Mace is the ground up outer fiber/shell of nutmeg.

Nutmeg is a sub for mace.

The temp probes were just sitting on top of the sticks, I used two of them because I don,t trust the one probe I have.
