I am on my second smoke with the additional element and PIC controller on my OBS. Love it but am not used to the fast recovery times and consistent temps. Because of that my time estimates are way off. I picked up a 14.3# brisket at Walmart and need it done for 6:00 tonight. I put it in about 6:15 last night thinking it might not be done in time. Well, it's 9:00 am now and I'm sitting at 185 IT. I guess we're pulling it earlier than expected.

So my question is, what is the max I can FTC? If I can't FTC until the time I need it then what should I do with it and how would I re-heat it? I assuming I'll pull it out of the smoker around 10:00 AM and need it for about 6:00. That's 8 hrs of FTC. Might be ok? I guess I can let it go to an IT of 195 and pull which should buy me another hour. Any thoughts?

hHen I said this was 14 lbs +, this was before trimming and I cut a piece off to fit it in the smoker. So maybe we went down to 10#. I guess 14 hrs for a 10# brisket is reasonable no?

You should be able to go to 195 then do the FTC. I have done the FTC for 4-5 hours and if I remember right it was still 150ยบ when I opened it up.

I would not take it to 195* in the Bradley.  Mine seem to dry out if i go much above 190*, usually pull and FTC at 185*.  I have FTC for 5 hours and it was piping hot.  If you cannot FTC to serving time.  FTC as long as you can then slice and put in a foil pan and fridge.  Reheat the pan in oven with a little beef broth and you will be good to go.
