Did this up yesterday for supper, used 4hrs of hickery and took about 9hrs to cook. My wife and company both loved it. We did a dry rub of Valeries(a local rib and yard bird bbq joints own rub and very good A tad salty and spicy but perfect on pork) also paprika and cajin.

Out of the obs and getting a FTW for a few hrs

Half of it that was pulled for sammies the other half is for hot pork with pepper gravy for tonights supper.

Be careful about calling yourself and EXPERT! An ex is a has-been, and a spurt is a drip under pressure!
