Cure in jerky keeps it safe while smoking at low temperatures.
I never used cure before when I used wet marinades and then dehydrated.

Frozen jerky after thawing is no different (IMHO) than jerky that had never been frozen as long as you vacuum pack it and keep it from getting freezer burn.
