More Sweet Bread

Curt, I converted over to 1/2 starters for Mom and I switched

mine that way too. Have (6) 1/2 starters.

Will be bringing Bread to IOWA smoke-out.

Another twist on Sonny's Starter....Peach Bread!



1 c. flour
1 c. whole wheat flour
1/2 cup brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
1 teaspoon salt
1 C. active starter
3 eggs
1/3 c. vegetable oil
1/3 c. unsweetened applesauce (or other fruit puree)
1 teaspoon vanilla
2 cups ripe fruit, any will do. good with ripe banana, but used peaches this time.
Optional: 1 c. toasted chopped nuts


 
Instructions Preheat oven to 350F. Grease 3 mini loaf pans @sprinkle sides & bottom with Turbinado Sugar

(2) Sift together dry ingredients.

(3) In large mixing bowl combine starter, eggs, oil, applesauce, vanilla. Add dry ingredients gradually and stir until just blended. Stir in chopped apple and nuts. Divide batter evenly between pans.

350 for 50 -55 min. use the toothpick test. I used 3 mini loaf pans. Don't use your stand mixer, you want your fruit in whole pieces.

So far I've tried Mango, Banana, Apples and peaches. All good.

That is going to Family Reunion for the keepers of the bread.

Just another thing to do with that lefover starter after a feeding.....



Choco Bread!

* 2 cups flour
* 1-1/2 teaspoons baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 1 tablespoon cocoa
* 2 teaspoons cinnamon
* 1 cup sugar
* 1 cup starter, the one you were gonna pitch
* 1 box Choc pudding mix
* 1 cup vegetable oil
* 1/2 cup milk, I used evap
* 3 eggs
* 1 cup chocolate chips... opitional, I didnt have any, still good
* turbinado sugar....spray the pans with flour spray and sprinkle the bottoms and sides. After dough is poured out and smoothed, more on the top
About 1 hr 15 min at 325. Sprinkle with confection sugar just for show.
These would be better in mini loaf pans, but I forgot where I put 'em.

Hey Sam, I have the starter.  I don't have any going right now as I froze 4 starters as I got out of the bread making for a while.  Too much other stuff going on  ;D  I am sure that the starters that I have frozen will be good once they are thawed out.  I am in Boynton Beach and make it to Miami about once per month.  Next trip down I will bring you a starter.  Or if you get up this way we can meet up.
