Lem's Beef Jerky

I picked up 11 pounds of top round for $30 this morning at Safeway. I sliced it up 1/4" thick with the 7-7/8" meat slicer from Cabelas. Really I wish I would have saved a bit longer and got a bigger slicer but this one works for now and its a pain in the rear to clean too. I put the meat into the Brine mix from Lem and I put in 2.5 ounces of Liquid Smoke. I'll let this stuff soak till Morning and it will go into the dehydrator for a 8 hour ride.

Cabelas, It was on sale a year and a half ago for $99. Could not pass it up :)

Now that's a pile of jerky!

Your slicer is made by Weston.  Everything about it looks like my 10 inch slicer that I bought from Weston as a refurb.  Seems they had built the slicers for Cabela and had an issue with a high temp fuse that popped prematurely so they took them all back and changed out the fuse so they had to be sold as refurbs.  And you're right, it is a pain in the butt to clean!

Really Nice color on the jerky, that should last awhile...I've not made jerky in awhile, I guess it's past time...
