My Fiance said...."CAN YOU PLEASE DO A PORK BUTT FOR ME PLEASE!!!!!!!!!!??????"

Sure why not. I have seen this method kicked around here a few times and did some reading up on this so I figured why not experiment.

I used the Raspberry Jam/Honey/Bourbon concoction and injected it into the Butt
- 1 cup Bourbon (I used Maker's Mark)
- 2 cups honey
- 1 cup Raspberry Jam
- 1 tbsp of ground pepper
***blend for 3-4 minutes***

Now I read that many people had issues with injecting this due to the raspberry seeds so I decided to strain this about 7-8 times. A few of those little buggers kept getting through. I must say this sauce is very sweet and has a nice kick to it with the pepper in it as well.

I injected most of the liquid into the butt and lathered the butt with molasses as always. LOVE THE MOLASSES BARK, and then rubbed it down with a large helping of Lychburg Tennessee Whiskey BBQ Seasoning. (Not sure if anyone has ever tried this stuff, if you ever run across it GET IT, it is VERY GOOD! So Inject, season, wrap up and let rest for 24 hours.
I'm going to use this on my next brisket. Anyways......I don't have many pictures of the beginning of this project but have the progress so far.

My plan was:

5 hours of Pecan smoke and blast the Bradley and max out the temp. I used 5 hours of pecan with my AMAZN pellet smoker, just picked up new pellets today thanks to my amazing fiance. Unfortunately  am at work right now so she is at home "baby sitting" the butt. Last time I checked in the IT was at 153 and Bradley was holding fast at 227. Sweet dreams my love I will see both of you tomorrow when I get home from work.

Last butt I did like this went all through the night and was ready by 2:00 pm, just in time for my brother to arrive and my fiance to get home to celebrate, and well of course me to wake up from some rest.

Here's what I have so far...I will post and update later this weekend. I will more than likely be recovering from my bachelor party festivities all day Sunday.

8.27 # thawed and ready to be trimmed

The mixture after being blended

This is what you have after straining out the first time. Keep doing this it will make injecting much easier

Unwrapped and almost ready to go. the smoker was warming up.

I asked my fiance to stop and this new BBQ and music store I found near uf. She said I can only go there supervised, just the same as Cabela's, my local gun shop, and the beer store as well........

Pecan, Sugar Maple, and Charcoal. $13.99 for 20 #'s of pellets is not bad at all. Now to buy a new tub to put them in.

after the 5 hour smoke ride I'm off to work, looking and smelling good so far.

"Telling you to invest in smoking your own jerky because buying it so much was getting way too expensive was the worst thing I could have ever done to us, now look at the monster I have created!" :-)

Looking good John!  A great container for holding those pellets can be found at the nearest Lowe's or Home Depot.  It is made by Kingsford, heavy plastic and is sold as a charcoal container.  They will hold around 40 pounds of pellets each and have a tight fitting lid to prevent moisture from getting inside.  Also has a pouring mechanism for easy pellet hopper filling.

I think they're around $11-12 each.

Or if you have some friends with cats the big plastic cat litter buckets work just as well

Be careful about calling yourself and EXPERT! An ex is a has-been, and a spurt is a drip under pressure!

Nice looking piece of pig ;D.
Or you can get some of these for less than half of the name brand and put some custom made labels ;) ;D
This is what I did. Just trying to save $$
They hold 20+ lbs each.
