last weekend (under the cover of a gazebo ) we smoked a bacon joint and pork loin joint... I ran the smoker for around 4 hrs, smoking all the time... is this correct, in that you should smoke for the whole length you cook for, or should you just smoke for the first couple of hours and then just keep the heat on for the rest of the cooking period ?

I know these things are not cheap to run... I mean 4hrs = 2Kw (plus the hotplate) worth of electric, and around a dozen pucks at 24p each, but don't really want to waste the pucks if there is no need to use them, and additional smoking after a certain length of time would have no additional effect on the flavoring..

Cheers

Meat usually only needs 4 hours of smoke. You can cook for a lot longer depending on what you are cooking. Butts can take up to 20 hours with only 4 hours of smoke.

Hello Malcolm
I usually only go 2 hours on the smoke. We like it with a lighter smoke than most people and don't get any complaints from the guests.
Never try to teach a pig to sing; it wastes your time and annoys the pig.

Guys thanks for all the tips - I guess it's all part of the learning curve, finding out what works best with different cuts of meat..
