Smoked Salmon Nuggets??

Morning everyone. I was in the store last night and saw some frozen smoked salmon nuggets. I was drooling at the idea and figured that would be a perfect snack for a Labour Day gathering this weekend. I have the salmon and was wondering if any of you have tried smoking nuggets. I plan to remove the skin and cut them into one inch chunks. I am going to dry brine them.

I don't want them to dry out so I was wondering if anyone has done these before, what temp setting did you have and how long did you cook them. I usually cook my salmon at 100F and raise it about 20F an hour for 4-5 hours until I get the proper IT. I assume that will be far to long for these little nuggets.

I would love any advice from people who have tried these.

So they turned out really nice. I admit that they were not as moist as if the whole fillet are smoked. But, for a bite size snack for a party, this was great and VERY popular. I also made a honey ginger glaze for them after and also had a whipped cream cheese dip for them. Was delish!!

Awesome!  Sorry i didn't see your thread earlier... i almost ALWAYS smoke salmon as nuggets.  Works great.  I like the smaller pieces because there is more surface area for the brine and smoke.

I see that you glazed them after, by after do you mean while they were still warm out of the smoker or just before you served them?

I put the glaze on afterwards, but I actually wish I had brushed it on a couple times during the smoking. I think it would have gone on better and produced a better result. It was delish, but just want to fine tune it.
