Pork butt

Looks fantastic. Taking the bark off a butt, would be like taking the icing off of cake.

Defiant

I take the bark off of mine, chop it with a knife and mix it back in with the pulled pork.  I also remove anything that is overly fatty or gristly in the bark and throw that away.  This adds a lot of smoked flavor as well as the flavor from the rub back to the shredded pork.
