Pork Butt Success Story

Sometimes things just go right, no matter what.  I bought a two pack of P. butts the other day with the idea of trying my first Hillbilly Bacon with one and making pulled pork with the other.

Got them both started on Saturday but then realized I wouldn't be able to smoke the one for pulled pork until Monday.  That's okay, I thought.  Shouldn't be a problem rubbing and 2 days in the frig instead of one.  Then I checked the weather forecast.   :(   Temps in the 50's, very windy with thunderstorms!  I didn't want to let it go 3 days, so I got up early hoping to get some smoke on it before the storms hit.  Then, move it to the kitchen oven to finish.

About an hour into it, the rains came with 30 mph winds!  I decided to try moving the smoker partially into the garage to see if I could keep everything dry and not get too much smoke in the house.  (we have a split level with the garage under).

It worked!!  And to boot, my OBS performed like a champion, 30 mph winds and all!!  Even the pig cooperated.  Stalled at 160 F for about an hour and a half, then made it to 192 F in only 9 1/4 hours total!!  I FTC'd for 2 hrs, then pulled it and we ate it a day early!!

Rubbed with garlic olive oil and Jan's rub.


All done. About to be FTC'd.


Every once in a while, things just work out.  Sorry no pulled picture.  We were too busy enjoying!!
