Rotating racks and water pan?

Hello all,

    I have begun to notice that the BS has different levels of heat from front to back and top to bottom. Does a person need to rotate racks for everything that goes into the BS or just certain things? I'm thinking everything....rotate front to back, top to bottom. How does that sound? And what about the water bowl? How often do you need to change or add water if at all? I was thinking just for things that are going to smoke/cook for more than 4hrs. Thought I would get some input from the pro's...am I on the right track?

Even through I have a circulation fan in my box I still rotate at the 4 hour mark when I change out the water bowl. I only change out the bowl one time.

A good strategy is to try to limit how many times the door opens.

Many smokes can be done with one opening midway, to change water and rotate racks.

I did 3. 7 pound butts this weekend and i didnt rotate them.ALL was well no issues.Just took a little longer for the top one to finish off. ;D My ribs on the other hand do get rotated. ;D
