Boating

If you can maintain the temp in the smoker, what's the difference between boating and closing the vents? 

You can add the aj or whatever to the pan under the the v tray and trap the moisture in the smoker.

Closing the vent retains moisture in the cabinet and reduces temp. Boating or covering in foil contains moisture inside of packet and creates steam heat that cooks more uniformly.  Would be my thoughts on this
