On a lot of videos I see the probe wires coming out of the top vent.  Is this the preferred method or is it OK to run the wires through the door since they are insulated and the rubber lining makes a good seal?

Mine are through the door as well.  No smoke or heat leakage and makes it easier if you are going to rotate racks top to bottom and front to back.

I run mine thru the vent, it's just whatever works best for you.
