Doh!

I put 5 briskets in our six rack Bradley last night at about 7:00 pm. (Total weight about 50 lbs.) Set the temp at 220*. This morning the largest two briskets, which were on the bottom racks are at 180* already. The three smaller pieces are sitting at 140* or so. I put the large pieces on the top two racks and the smallest at the bottom and lowered the temp to 200*.

The party is at six tonight. I'll start cutting brisket a bit after 5:00.  I never guesses that the largest cuts would be done this soon. Having 4 hours of ftc has always been enough of a cushion in the past to get everything together properly.

Any ideas?

So, I just reset the temp probes and it looks like the biggest brisket is really sitting at about 165*. Maybe I hit a pocket of fat with the earlier reading of 185*?

Anyway, I feel a lot better with a spread of between 140* and 165* at this point in the morning.

That sounds more like it.

I was going to ask what you were using to measure the IT of the briskets but it appears you have discovered your issue.
