Alder Smoked Halibut - this was my first attempt at Halibut... I tried it today.

Alder Smoked Halibut

With Smoked Red Potatoes

I purchased one pound of Halibut this morning at Krogers.

1 lb of fresh Halibut...

Mixing the ingredients in a mixing bowl...

In a bowl combine marinade ingredients...

Arrange halibut steaks in a single layer in a shallow glass pan.

pour marinade over fish and cover - I used a FoodSaver Quick Marinator. Refrigerate for an hour.

Around 45 minutes later I will preheat my Bradley Smoker to 250 degree, knowing
that once I open the door the temperature will drop.

I used Alder flavor bisquettes/wood...

Spray the rack before inserting into your smoker

Here are the Halibut pieces that were marinated and stored in the frig for an hour
then removed from refrigerator and let stand for 20 minutes.

I inserted the rack second rest from top.

I laid the Halibut pieces on the racks that I sprayed before inserting into the smoker.

Here are the steaks resting in place. I will not turn this at all.

Remember second rack from top - leaving the top to put my red potatoes in...

The temperature has dropped but will come back up within a few minutes.

Make sure to keep an eye on the temperature and adjust as needed.

This is an hour into smoke. I just took out my Red Potatoes.

Still got plenty of smoke going on...

The fish is done, man it looks good.

Plated and ready to serve...

Let's eat!!!

It was actually pretty good. My wife is not a big fish person but I really enjoy smoked fish. She did however like the smoked red potatoes that I made with this dinner. So did I! Next time I might try to tweak the recipe a little. I used the one from Bradley's website.

Everything was pretty good and the tomato well I believe it speaks for itself. What part of KY are you from? I'm living in the Northern Kentucky area – Cincinnati Metro.

Yeah about 5-10 minute drive depending on traffic.

You have a little bbq joint there if I remember called Starnes Bar-b-q or something like that. I had ribs there once a little while back.

Nice looking plate! Did you finish the red potatoes another way or cook um in the Bradley?

I smoked the potatoes for I hour and then foil, added a little more EVO and then set on the grill for a while. Still had a nice but not over whelming smoky flavor.

Hey SouthernSmoked,

I hate to bump a post from 4 years ago, but I'm interested in trying your method here with the halibut and the red potatoes. The pictures don't show up anymore, so I just wanted to get some clarification on the timing.

First of all, were the potatoes cut like roast potatoes? Were they peeled?  Do you even remember? Hahaha

Second, I take it you smoked both the potatoes and the halibut together for one hour... How long did it take to finish cooking the fish? Last thing I want is to have fish done 1/2 hr before the potatoes.
