Rack of Ribs

Have been using the 3 - 2 - - 1 method; 3 hours smoke, 2 hours with apple juice in foil, 1 hour with sauce to dry.  Does anyone use the FTC method to finish?  (Foil, towel, cooler)

I did once but the ribs got over cooked.   :( :(  Won't do again.
