Starting a brisket this evening

Smoking Duck

Well, I'm happy to report that both came out very successful.  Was surprised that the brisket was done in about 13 hours.  The wife pulled it out for me at 8:30 this a.m. as I was on the road about 6:30 this a.m.  The brisket came out extremely tender....almost falls apart when you slice it.

As far as pheasant goes, we went but it started raining just as we went out to hunt.  We got a bunch of pheasant, some hungarian partridge and some Chuckars.  I've got to clean them up as soon as I thaw out.  It was freeking cold (about 28* F) with rain.  My double barrel Berretta had ice built up on it, my hat had about an 1/4" of ice on it and I still can't feel my ears, fingers or toes.

But it was fun and now I've got some birds to throw in the smoker  :)

Steeler....she's a keeper!
