Starting a brisket this evening

Smoking Duck

Hey all......time for my second smoke....thought I'd try something a bit more challenging that a boston butt, so I bought a 10 lb brisket.  Gonna start it out at 6 pm this evening with 4 hours of smoke (thought I'd try Maple or Hickory or a combination of both).  I've seen many different ways of smoking it but really want to do it low and slow.  I'm figuring at 210* for a 10 lb butt, I'm probably looking at 20 hours to get the meat to an IT of 185.  Does this seem right?  I know people don't like to give times out and I'm fine with that.  Just wondering if smoking the brisket at 210 seems right.  That doesn't seem too low does it?  I really want it to go as long as possible (gonna be pheasant hunting in the morning and would like to pull the brisket around 2 with 4 hours of FTC) so I can eat it during the Steelers-Patriots game.  If that seems wrong or too low a temp, can someone let me know?

Duck,
210 should be OK.  You said you want it to go long so you should be fine.  Steelers-Patriots, what a great match up.  I'm going to Nashville tomorrow to watch the Titans take on L.T. and the Chargers.  What could be better, smoking a brisket and watching the NFL.  The vets on this forum will tell you if I'm incorrect about the temp but I think you're good to go.

P.S. Remind your wife that a beer in hand is necessary as a fire extinguisher should your Bradley suddenly burst into flames. ;D

SD your a man after my own heart!!! Safety yep thats the ticket. Man, Ann will never go for that one but I'll try it anyhow.  :D The brisket time sounds about right at that temp. Have a great time watching the game.

Thanks Ice....anything I can do to help, let me know.  I'm pretty sure I have a medical study somewhere extolling the virtues of double-fisted smoking....now, I just gotta find it amongst all of my other stuff I collect just to try and prove my wife wrong ;D.

I only wish that the famous Ice Sauce would have arrived.....well, it is a 10 lb brisket.....hopefully, I'll have leftovers remaining when it does arrive....if not, I guess I'll be forced to smoke something else.  Dang it.....why does life always have to be so hard ? ??? ;) ;D

Duck,
Never pheasant hunted before but sounds like fun.  Can you smoke a pheasant?  What am I saying?  You can smoke a rock and it would taste good.  Have you ever tried to smoke a pheasant?

Ice, remind your wife safety always comes first.  That's why the cooler full of ice and 12 ounce portable fire extinguishers is always within arm's reach of the smoker.  :D

Yes, pheasant smoked is awesome (so is the hunting; especailly behind a really good dog).....I've not done it before but have tasted it.  I will be sure to give it a try now that I have a BS.

I have no doubt that Iceman has properly versed the Missus on smoking and all that it entails.  Methinks he's probably invented most (if not all) of the proper use of alcohol and smoking. ;D

SD, be sure to report back with results (pheasant hunt and brisket) It just so happens I bought a brisket today to do some time next week, and I love to pheasant hunt!

Smoking Duck-smoking gives me a reason to drink, and drinking gives me a reason to smoke, so I think I've got my priorities right! ;)I shoot for a cab temp of 210 for brisket, and pull at 185-190, then FTC. Sounds to me like you have it figured out. I've only done one brisket that was over 10 pounds (most are 6-8 lbs). The best I can remember, it took around 13-14 hours, but that was back in August when the outdoor temps were 90-95. Good luck!

Hey guys,

The brisket is sitting on the kitchn island right now for about 15 more minutes, the DBS is warming up, and I'm getting my ET-73 ready for it's maiden voyage.  4 hours of hickory smoke will soon be on it's way.  It's about 28* out right now, so I've got a brick in the DBS as well to try and keep the heat in as much as possible when I spritz it.

The sad news is that they're calling for snow to start soon and then a day's worth of freezing rain and anyone that's ever pheasant hunted knows you can't hunt in rain; the dang birds just won't fly.  I'm holding out a little bit of hope but not much.  Well, at the least, I guess that means more beer tomorrow.

Ontrack, I like the way you think.  I think that everyone believes in something.  I believe it's time for another beer  ;D

I'll let you know how both turn out.

I've gotta tell you that I'm really impressed with the DBS.  This is my first smoke using my Maverick.  I've got the DBS set at 210* and my Maverick has been reading a steady 210* for some time now.  It might fluctuate 1 degree either way for a minute or so, but it is right on target.

I'm very impressed and the hickory smoke is driving me absolutely crazy.....but that's a good kinda crazy to be  ;)

Time and temp seem good to me.  I recommend that you slice against the grain for best results.  Wish I could get my hands on some pheasant.  Have not had one in years.

Sorry about the weather forecast, Duck. If you can't hunt,then drink! Hopefully the weather won't have any effect on your brisket. I had a turkey breast rubbed and ready to smoke today, but we had just enough rain to screw up my smoke. Never heavy or hard, but just enough...I cold smoked 2 filet mignons last night and cooked them on the grill tonight in the rain-delicious-and hopefully the bird breast will be a go for tomorrow! :)

Sorry about the weather Duck.  Oh well, at least you've got brisket, beer and the NFL for Sunday.  That's not a bad combination.  Kick back and enjoy the day!  Scratch your dog behind the ear too.
