Dem Bones

I was supposed to be skiing today, but changed our minds when the weather report suggested that there'd be rain, mixed with snow.  Jokes on me: clear day all day, and plenty of powder from the week's worth of weather here in California.

Decided to fire up the Bradley and after facing an "E1" error (which cleared up by unplugging and reconnecting cables, for some reason) decided to smoke some Beef Ribs.  Figured we couldn't eat a whole prime rib in one sitting, so this was a good second choice.  Used the same Lipton onion soup, pepper, ground mustard, italian seasoning, garlic, olive oil rub/paste I'd use on a rib roast (wound up a little salty).  Threw them into a 210-220 box with 2 hours, 20 minutes worth of mesquite/pecan/maple (2 of each, 1 extra pecan).  I think we'll be freezing a few bones for soups and such.  The rest I'm going to be eating all week long.

More on the medium to medium well finish, but tasty and tender.  Hope you all are having a great weekend.

Lookin tasty Consig.  Went to find an Asian market a co-worker told me about to buy some korean beef ribs.  The ones he has smoke in the past look like a bone in prime rib with just the center cut out so there is about 2 to 3 inches of meat above the bone across the rack.  I was hoping to have them tomorrow.  Will have to call the guy and get better directions.  I stopped off at Iowa Farms Meats and could have spent an entire day there.  Picked up some beef rub and 2 different kinds of Char Crust.  First time I had seen it and there were a few good comments posted here on it.

I seem to have had a problem with my hands and arms today.  Everytime my hand got near that rack of prime - prime rib, they started to tremble and clench.  Took looking at the price tag for 5 minutes before I could let go, that and the credit card would have bounced.  :D

Giz: I called all over town and couldn't find fresh ribs.  Had to settle for cryo-frozen (probably should have checked out Costco, but didn't feel like dealing with the crowd) that had to be hot water defrosted.  Had the same shakes you mention passing the standing rib roasts, but just didn't make sense.

Ribs were good, though.  Still feel like I "settled" though.   I wonder if I could fit a crown roast of beef in the Bradley?  At some point, I'm going to do a crown of pork, but the beef.... :o

We're dry, all doom and gloom notwithstanding.

still gnawing on dem bones and gotta say, they're a great thing to have on hand. 

Mrs. O'Leary's cow enjoyed one or two as well.

Looks awesome. Just perplexed as to how you got ribs that big out of that little cow.

Well, I live in California. The oxygen and logic-free zone in Sacratomato does not leave me especially inspired as a resident.

YUM!  Those look fabulous!  Not to mention, I love Lipton Onion Soup Mix...  I use that for everything!  WTG!
