Hi All

I'm not new here, I've been lurking and reading for a while now and trying all the great recipes you guys have posted. I decided to try my own recipe tonight. It turned out great! I did a whole chicken and here's how...

3 cups of water
2/3 cups of sea salt
1 tblsp chilli powder
1 tblsp oregano
1 tblsp garlic powder
1 tblsp onion powder
1 tblsp black pepper
4 cups apple juice

Combine every thing but the apple juice in a sauce pan and bring to a boil. Allow to cool to room temp, and add apple juice. Place whole chicken in brine for 30 min. Remove, rinse well and allow to for pellicle. Preheat OBS to 225' f. Smoke chicken with Alder for 2.5 hours. IT of 160' before you remove it. Let it rest for 15 min, carve and enjoy!

Here is how it looked.

Sorry about the crappy image quality, my camera went for a swim while my wife and I were fishing last week. I'm surprised it works at all actually.

I would love to say that looks great but it kinda reminds me of my mother-in-law.
But honestly it looks awesome.

Looks great Paully, did you cook it beer can style or on the rack. Was the skin crisp? Mine are not so great unless I finish in the oven.

I can't seem to part with the beer to do it beer can style, so I did it Budda style. It sat on the rack just like it is in the picture. The skin was nice and crispy. I had the vent half open. The wings were awesome! I think pulled pork is next.
