I am doing a 10lb brisket and 2 8lb butts this weekend to take to a construction site and feed my customers. I am wondering if they will fit in my obs at the same time or should I plan on two smokes to be on the safe side. What little smoking I have done has been mesqite for brisket and hickory for pork, what would you use if I can do both together. I also have apple in my inventory. Any guidence would be greatly appreciated.

I know wts its mesqite and mesqite only in your world

Thanks BFLO

You can certainly do them together, but if it were me, I would flip a coin to choose the wood, or Hickory would be my go-to.

All will fit but it will be a big load and the brisket and butts will take different amount of time to finish.  Oak would be a good balanced flavor (IMHO) for both if you have it.  Hickory and apple would be the next two in line.  I like Apple on anything pork.

Thanks for the info guys. I was very concerned with not having enough space in the bradley but I will give it a try now. If it all doesnt fit at once I will do the brisket in mesqite [finish in oven] and smoke the pork second. I shure hope this works out I dont want to disapoint my best customer.
