Hey Bsolomon,
Thanks for the input, I want to start out on the lighter side for sure, so maybe I'll go maple or pecan.  I seasoned it with pecan, my wife came out during the process expecting to have it smell like pecan... not a bon fire [:D]

It will be really interesting to see what flavor these different woods actually give the product.

Sorry to hear about the faulty heat plate, sure seem to hear about a lot of problems right out of the box, make one a little anxious about quality control.  The last thing I want to own is something your worried about not working when you need it.
