Want to try some Canadian Bacon

Well, I just finished soaking the meat for 30 minutes and plopped it back in the fridge. How long do you guys normally refrigerate it uncovered and what does this do for me? My patience is wearing thin and I really want to fire up the smoker...

Ahh but you must have patience..... you still need to wait two days minimum after smoking before digging in.  :)
If you smoke cheese I prefer to wait two weeks before tasting.  :)

Patience allows the smoke to permeate the food and also mellow. Most foods improve if allowed to rest after smoking.

Habanero Smoker

It develops the pellicle (tacky surface), that helps it take on and absorb the smoke better. Generally just over night in the refrigerator is enough time for my bacon.

Well, the meats been in the smoker...had temp up to 130F internal and one of the rugrats accidentally unplugged Bradley. Discovered at in internal temp of 115F. Got the unit back on, but is my meat ruined??

Because it is cured you are alright. I'm not sure, but it may come out a bit dry. Let us now how it turns out.
