Our local orange box has the beer can holder for roasting a chicken over a beer can.

Will this work well in an OBS?  How long for a chicken at what temp?

Thanks

The flavor of beer can chicken turns out well in the OBS. I generally smoke/cook chicken at the highest temperature I can get the cabinet at, and I apply 1:40 - 2:00 hours of smoke. It's done when the internal temperature reaches 160°F - 165°F; measured at the thickest part of the thigh.

But if you want to improve the skin texture, after the smoke has been applied it is best to finish it on a covered grill.

... or, even better, finish it in The Big Easy.

On my Treager envy, Is that upper rack an option or is it built in?

Most of the Traegers have the option of a double tear rack that sit on top of the bottom grill. Thus making more room for more ribs and such.
