Bacon is the Crack Cocaine of the Food World.

Be careful about calling yourself and EXPERT! An ex is a has-been, and a spurt is a drip under pressure!

I hate I didn't take anymore pic's...but my hands were busy with the brisket.  I will say that the brisket was so tender it was falling apart.  The flat was a little dry... but my wife wanted it chopped up for BBQ sandwiches.  I took the brisket out at 193* IT, probably should have taken out at 190*.  Temp of the smoker was 205* at the top and I left the PID at this temp as I figured the  bottom was probably at 210*.  Have no complaints with this one.
