Maybe too high of temps, vent closed fully, not rotating racks, no water in the pan, v-tray upside down just to name a few. Can you give more specifics

Hi Mary;

Welcome to the forum.

As NePas stated more information is needed. If you are speaking of butts, and brisket they often will have the appearance of being burnt. That is the bark, that contains most of the flavors. If it is other cuts of meat then can you let us know what types of cuts, and how you went about smoking/cooking it.

If you talking about a burnt taste, you may be applying too much smoke, how much smoke are you applying?

Are you using an alternate temperature monitoring device such as the Maverick ET-73 or ET-7; to keep track of the cabinet and internal meat temperatures? These items are very helpful in preventing overcooking.
